Banana Nut Cake For Passover
|1 ½||cups Sugar|
|2||Bananas (medium sized, very ripe)|
|½||cup finely Chopped Walnuts|
|¾||cups Matzo Cake Meal|
|⅜||cups Potato Starch|
|Juice of a Lemon|
Beat whites of eggs with salt until they stand in soft peaks. Add sifted sugar and continue to beat until stiff.
Beat yolks until thick and lemon colored. Add mashed bananas and nuts. Fold mixture into egg whites.
Fold in meal, starch and lemon juice. Until evenly distributed.
Bake in a 350 degree oven for 1 hour and 20 minutes. If cooked in a tube pan (10 inch) is used bake for 1 hour and 10 minutes. Invert to cool.
