Chicken Fried Meat Skewers

Recipe provided by Anne Green of the Marion Rappeport Chapter.


2 lbs. cubed lean Beef
2 lbs. cubed, lean Veal
2 Eggs beaten
Bread Crumbs or Matzo Meal


On a wooden or metal skewer, alternate one piece beef and one piece veal until about 4 cubes on each skewer. Roll each skewer in beaten egg, then roll in bread crumbs or matzo meal. Season with salt and pepper. Fry skewers in shortening, oil, or chicken far until brown. Lay each skewer flat into a greased baking pan. If desired a can of tomato sauce mixed with a little water can be poured over skewers. Bake for one hour at 350°. Serve like chicken legs.
