Mushroom Meat Loaf


Recipe provided by Mary Ziss of the Maplewood - So. Orange Chapter.

Ingredients:

2 lbs. freshly ground Meat (chuck or tenderloin)
1 lb. fresh Mushrooms
4 large Onions
3 Matzohs
3 Eggs
½ cup boiling Water
Salt & Pepper

Directions:

Saute onions in a small amount of fat. When tender add diced mushrooms, salt, pepper and 1/2 cup boiling water. Cover and allow to simmer until mushrooms are tender.

Soak 3 matzohs (broken up) in warm water - put in strainer and let drain. Do not squeeze water out of matzohs.

To the meat add the 3 eggs, the drained matzohs and the sauted mushrooms and onions. Mix well - add salt and pepper to taste. Other spices may be added, suitable to your taste.

Grease pan slightly, arrange meat so it wil not be crushed. A large loaf pan is suitable. Place in 300 degree oven for 45 minutes to an hour. Serve hot or cold.
