Nobody makes a noodle pudding as wonderful as this. Until the day Aunt Ruth shared the recipe, I did not know it was Kugel.
Aunt Ruth's Homemade Noodle Pudding
|1||(8 oz.) package of egg noodles|
|2||eggs - beat well|
|1||(12 oz.) jar of apricot preserves|
|1/2||pt. of sour creme|
|1/2||cup of creamed cottage cheese|
|1/2||cup sun dried raisins|
|1/4||cup melted butter or margarine|
|1/4||teaspoon of vanilla|
Cook the egg noodles according to the instructions on the package. Drain them. In a large bowl, combine the eggs and sugar. Add the noodles, preserves, sour cream, cottage cheese, raisins, and butter. Blend all ingredients well.
Put the combined mixture into a greased 2 quart oblong baking dish. Sprinkle the top with cinnamon.
Bake the pudding at 350 degrees until brown and crisp on top.
This dish may be refrigerated and reheated as needed.
