Party Style Meat Loaf Roll

Recipe provided by Faye Kaplan of the Union Chapter.


2 lbs. of Meat Loaf uncooked
5-6 large boiled Potatoes)
1 Egg


This trick is quick to prepare if frozen the day before, goes a long way and looks pretty at a gathering.

Prepare meat as you would for a normal meat loaf - lay out on wax paper. Take boiled potatoes and mash. Add salt, pepper and eggs. Place mashed potato mixture on top of meat.

Use wax paper to roll. When finished rolling, this will look like a jelly roll. Freeze.

When ready to serve, cut into 1 inch or 1 1/2 inch slices while still frozen and broil.
