Creamy Strawberry Jello Mold


Recipe provided by Martha Berkowitz of the West Orange Chapter.

Ingredients:

2 pkgs. Frozen Strawberries
1 pkg. Strawberry Jello
1 cups Boiling Water
3 Eggs seperated
4 tbs. Sugar

Directions:

Defrost berries.

Dissolve jello in boiled water - let cool to room temperature.

Take 1/4 cup juice from berries and add to egg yolks - stir well. Cook in a double boiler until it thickens - stirring constantly. Let cool.

Beat in cooled jello, a little at a time. Chill mixture still slightly thickened.

Fold in crushed berries.

Add sugar to egg whites. Beat egg whites until foamy stiff peaks.

Fold into jello mixture gently and chill in a mold until jello is set.
