Weequahic Salad


Recipe provided by Betty Geier of the Ivy Hill Chapter.

This health salad recipe seemed very similar to the Claremont Salad recipe that we already had on the site. I did a little research and learned that it originated at the Weequahic Diner in Newark, New Jersey. Apparently, the owners of that diner later operated the Claremont Diner in Verona, New Jersey.

Ingredients:

2 cups of Cabbage (shredded)
2 lg Onions (sliced)
1 Carrot (sliced)
1 Green Pepper (chopped)
1 Cucumber (thinly sliced)
3 tbsp. Vinegar
3 tbsp. of Salad Oil
3 tbsp. Sugar
1 tbsp. of Salt

Directions:

Mix ingredients thoroughly. Cover tightly and refrigerate overnight.
